Recipes for Holiday Entertaining
MUSHROOM CAPS
Large mushroom caps {as many as you need}
1 can crab meat
1 8 oz. pkg. cream cheese
parmesan cheese to taste
shredded mazorella cheese
Mix crab, cream cheese and parmesan cheese together.
Put in mushroom caps.
Cover with shredded cheese.
COOK for 20 minutes at 350°.
HAM BALL
2 cans flakes of ham
2 8 oz. packages cream cheese
2 heaping tbsp. mayonaise
chopped green onions
1 teaspoon Keens dry mustard
2 tablespoons dillweed {or to taste}
MIX all together and shape into ball or put in fancy dish.
Serve with different kinds of crackers.
CHEDDAR SHORTBREAD BITES
These flaky, cheesey bites are easy to make and store well.
1 cup all-purpose flour
1/2 cup butter-softened
1/2 teaspoon salt
dash cayenne pepper
1 cup sharp cheddar cheese-shredded
Combine flour, butter, salt and cayenne pepper in bowl and beat at medium speed until dough forms.
Add cheese and mix until a ball forms.
Shape dough into a circle and refrigerate for 2 hours or overnight.
Heat oven to 350°.
Roll out dough om lightly floured surface to 1/4 inch. (It will be hard to roll at first but will soften.)
Press together any cracks that form on edge of dough.
Cut dough with cookie cutters e.g. stars, triangles, circles.
Place onto ungreased cookie sheets.
Bake for 12 to 15 minutes or until lightly browned around the edges.
Let cool on pan.
Makes approximatly 60 appetizers.
WHIPPED SHORTBREAD
1 cup very soft butter (no substitutions)
1/2 cup powdered sugar
1/4 cup cornstarch
1 1/2 cups flour
1/4 teaspoon salt
Beat ingredients together until they look like whipped cream.
This is the key. You have to whip really well.
Drop by heaping teaspoons onto cookie sheet.
Bake at 325° for 18 to 20 minutes.
Cool on pan for about 5 minutes for easier handling.
Makes approximatly 3 dozen.
MARSHMALLOW ROLL
1 egg-beaten
1/4 cup confectioners' sugar
1/2 cup butter
1 teaspoon vanilla
2 cups semisweet chocolate chips
1 package (10 1/2 ozs.) coloured minature marshmallows
1/4 cup sweet coconut
1 cup chopped walnuts
Melt chocolate chips, vanilla and butter.
Mix into the chocolate mixture the confectioners' sugar, egg and then the marshmallows.
Turn onto wax paper and shape into log.
Roll in coconut and put in refrigerater to set.
Slice when ready to use.
BRIE WITH FIG AND PEAR
1/2 cup butter
1/2 cup honey
2 pears-cubed
1/2 cup cashews (optional)
1/2 cup figs-chopped
Preheat oven to 400°.
Saute pears in butter until soft.
Add figs and cashews.
Stir in honey.
Simmer until it starts to thicken.
Put Brie cheese in preheated oven for 4 to 5 minutes to soften cheese.
Take out of oven and put onto a fancy serving plate.
Pour mixture over Brie cheese.
Serve with crackers.
